Coarsely ground meat is mixed with crushed spices and shaped into large, flat rounds. Pan-fried until the edges turn dark and crisp while the center stays juicy. The texture is rough and rustic, not smooth, with the coarse grind visible in every bite. The excess fat is part of the point, it carries flavor and keeps everything moist. Best eaten with naan, raw onions, and a squeeze of lemon.

Beautiful flavors
