Handi Gosht

Meat cooked slowly until exceptionally tender, in a thick, rust-colored gravy that clings to every piece. Tomatoes, onions and warming spices come together into a sauce that grows richer as it cooks, while the meat becomes soft enough to yield easily with a fork. Traditionally served with naan, Handi Gosht is the sort of dish that leaves little sauce behind, especially when someone remembers to scrape the serving bowl for the last few spoonfuls.
