Rice slowly cooked in milk until thick and creamy. Unlike lighter versions of kheer, Sondhi Kheer develops a distinctive earthen aroma as it cooks, giving it a character all its own. The sweetness is restrained, allowing the fragrance and richness of the milk to remain at the forefront. Smooth and deeply satisfying, it is often served in small bowls after a meal. Familiar in appearance, but unmistakable from the first spoonful.
